Socca is a French flatbread made from chickpea flour. It originated in the southern town of Nice, where it remains a common street food, served piping hot, often with a simple drizzle of olive oil and pinch of flaky sea salt.
Baked until golden, the healthy dough has a consistency more akin to a pancake than a pizza. But its nutty, earthy undertones make it the perfect base for all sorts of savory toppings. We often go with Italian-inspired flavors, topping it with a smear of pesto or tomato sauce, and then as many roasted veggies as we can fit. Here’s a recipe to get you started. Feel free to swap out the toppings according to what you have on hand. Eggplant and zucchini also serve as nice additions.
