The star of this recipe is the maple blueberry compote. It’s true blueberry bliss.
When we first made the simple sauce, we drizzled it on top of cornbread and couldn’t get enough. It soon made its way onto pancakes, oatmeal, ice cream, and finally into this spruced up version of a classic lunch staple. It might be our favorite use for it yet.
Here, it’s slathered together with crunchy peanut butter on a tortilla that’s warmed to a crisp. We’re sure you’ll love it, and while we call it an “adult” version, we’re pretty sure most kiddos will love it, too.
Adult PB&J Roll-ups with Maple-Blueberry Compote

Ingredients
- 1 cup blueberries
- 2 Tbsp. water
- Juice from ¼ of lg. Lemon
- Salt, pinch
- 2 Tbsp. maple syrup
- 1 banana, sliced
- ½ tsp. coconut oil
- 2 whole wheat tortillas
- 2 heaping Tbsp. peanut butter
- Cinnamon, to sprinkle
Directions
- Step 1
- For the blueberry compote: In a small pot, place blueberries and water over medium heat. Bring to a simmer. Add lemon juice and a pinch of salt. Reduce heat to a low simmer, and cook for five minutes, stirring occasionally. Stir in maple syrup, and simmer for another two minutes. Remove from heat.
- Step 2
- For the roll-up: Lay tortilla flat. Place 1 heaping Tbsp. of peanut butter in the center. In a circular motion, spread peanut butter out towards the sides of the tortilla, leaving 1-inch of tortilla uncovered. Sprinkle with cinnamon. Place a line of banana sliced down the center of the tortilla. Repeat with the remaining tortilla.
- Step 3
- In a nonstick pan, heat half of the coconut oil over medium heat. Place one tortilla, peanut butter side up, in the pan. Drizzle a large spoonful of the blueberry compote down the center of the tortilla. Let the tortilla cook for two minutes, or until the bottom starts to brown. (Use a spatula to lift up one side of the tortilla so that you can see if the bottom’s starting to brown.)
- Step 4
- Carefully using your hands or a spatula, fold the right side of the tortilla in towards the center. Fold the left side of the tortilla towards the center. Remove from heat. Repeat with the remaining tortilla.

- Slice both tortillas in half, and enjoy.
